When a hotel works out what water costs it, it usually looks at the supplier's invoice. But the real cost carries things that don't appear there: the storage the pallets take up, the staff loading and restocking cases, the logistics of glass in and out, the losses and the cold-room space for chilling.

Producing the water at the point of service eliminates all of that at once. And it adds something the bottle can't give: five different waters from the same point —cold, ambient, sparkling, hot and boiling— in the space of a drawer.
